Stuffed Green Peppers Recipe
Another one of Mom's dinners that I loved but was not made very often.

Ingredients
  • 8 large green peppers
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 2 eggs
  • 1 cup of cooked rice
  • 2 cloves fresh garlic, mashed
  • 1 large onion, chopped
  • salt
  • pepper
  • Italian seasoning
  • -
  • 2 lg cans tomato sauce -or- spaghetti sauce

Directions
  1. Grease bottom of a deep pan or cake pan with oil.
  2. Cut tops off of green peppers and clean out the seeds so that you have 8 hollows.
  3. Set aside in the pan, bottom down.
  4. Mix meat, eggs, garlic, onion, and all seasonings in large bowl.
  5. Add rice and mix together.
  6. Stuff peppers with meat mixture, placing them back into pan bottom down when full.
  7. Place in pan and pour both cans of tomato sauce, or spaghetti sauce, over top of the meat and peppers.
  8. Cook at 350 F for an hour.
  9. Serve with beef rice, mashed potatoes, or beefy noodles.
  10. **TUILELAITH'S NOTE: About 10 minutes before I am ready to take these out of the oven I sprinkle with shredded cheese. My Mom did not do this but we like it that way.

Oh thanks, I have not had these in years!


I love these.. fixed them this summer as I had forgotten how good they were.... now I want to make them again after seeing this... I grew up on these... of course back then I only ate the fillings and left the pepper...


I have been looking for this exact way to cook stuffed bell peppers for a long time now. Thanks for the post.

Alterations


You could use turkey or chicken instead of either one of the other meats.


I think it still needs a little cheese too
