Ingredients
  • 1 clove garlic, minced
  • 1 tT olive oil
  • ½ lb hot Italian sausage links, casings removed and cut in chunks
  • ½ lb boneless, skinless chicken thighs, cut into 1-inch pieces and wash
  • 1 c uncooked rice
  • 1 c onion, choppd
  • 1½ c chicken broth
  • 1 -8 oz can tomatoes, undrained and chopped
  • ½ t paprika
  • ¼ t ground red pepper
  • 1/8 t ground saffron
  • ½ lb medium shrimp, peeled, deveined and washed
  • ½ c red pepper strips
  • ½ c green pepper strips
  • ½ c frozen green peas

Directions
  1. Heat garlic and oil in a large skillet over medium-high heat.
  2. Add chicken and sausage to oil and stir until browned.
  3. Spoon off all but 1 tablespoon drippings from skillet.
  4. Add rice and onion.
  5. Cook, stirring, until onion is transparent and rice is lightly browned. Add broth, tomatoes and tomato juice, paprika, red pepper, and saffron.
  6. Bring to a boil; reduce heat, cover, and simmer 10 minutes.
  7. Add shrimp, pepper strips and peas.
  8. Cover and simmer 10 minutes, or until rice is tender and liquid is absorbed.
