Jewish Tsimmes With Meat

- vegetable oil shopping list
- 3 lbs 7 bone roast (or any pot roast meat) shopping list
- salt shopping list
- fresh ground pepper shopping list
- 2 cups thinly sliced onions shopping list
- 2 cups boiling water shopping list
- 1/2 lb. pitted prunes shopping list
- up to 5 oz dried apricots (to taste) shopping list
- 3/4 lbs. carrots, scraped and sliced shopping list
- 1 lb. sweet potatoes, peeled and sliced shopping list
- grated peel and juice from 1/2 lemon shopping list
- 1/4 t. ground cloves (optional) shopping list
- 1 t. grated fresh ginger shopping list
- 1/4 t. cinnamon shopping list
- a few gratings of nutmeg shopping list
How to make it
- Put a film of oil on bottom of large heavy pot over medium heat
- season meat with salt and pepper and brown it in batches
- remove meat and cook onions in pot until soft
- return all meat to pot, cover, and cook 1 hour over gentle heat
- After 30 minutes, pour boiling water over dried fruit and let soak 30 mins.
- Preheat oven to 325
- Add prunes and apricots and their liquid to the pot, with carrots and remainder of ingredients, except for sweet potatoes
- Replace cover and bake for 2 hours
- Add sweet potatoes and bake for another hour
