Jewish Tsimmes With Meat Recipe
This is my first time posting a recipe here. It's one that I learned from a friend when I lived in Israel for a year. Like my mother would say, it tastes better the second day. Good in crock pot or stove/oven method.

Ingredients
  • Vegetable oil
  • 3 lbs 7 bone roast (or any pot roast meat)
  • salt
  • fresh ground pepper
  • 2 cups thinly sliced onions
  • 2 cups boiling water
  • 1/2 lb. pitted prunes
  • up to 5 oz dried apricots (to taste)
  • 3/4 lbs. carrots, scraped and sliced
  • 1 lb. sweet potatoes, peeled and sliced
  • grated peel and juice from 1/2 lemon
  • 1/4 t. ground cloves (optional)
  • 1 t. grated fresh ginger
  • 1/4 t. cinnamon
  • a few gratings of nutmeg

Directions
  1. Put a film of oil on bottom of large heavy pot over medium heat
  2. season meat with salt and pepper and brown it in batches
  3. remove meat and cook onions in pot until soft
  4. return all meat to pot, cover, and cook 1 hour over gentle heat
  5. After 30 minutes, pour boiling water over dried fruit and let soak 30 mins.
  6. Preheat oven to 325
  7. Add prunes and apricots and their liquid to the pot, with carrots and remainder of ingredients, except for sweet potatoes
  8. Replace cover and bake for 2 hours
  9. Add sweet potatoes and bake for another hour
