Corn Bread With Real Corn Recipe
A family favorite that I am asked to make again and again!!! Moist and very healthy. Cilantro adds "freshness" that is not overpowering. Real corn makes it absolutely irresistable!!!

Ingredients
  • 1 1/2 c cornmeal
  • 1/2 c whole wheat flour
  • 2 Tbsp gluten
  • 1 1/2 c skim milk (or buttermilk)
  • 1/4 c fat free plain yogurt
  • 2 Tbsp unsweetened applesauce
  • 2 Tbsp oil
  • 2 tsp baking powder
  • 2 tsp sugar or splenda
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 c frozen corn
  • 1/4 c fresh cilantro, chopped (optional)

Directions
  1. Heat oven to 450. Spray 11 x 7" rectangular pan or 8 x 8" square pan with cooking spray.
  2. Mix all ingredients well with wire wisk or electric mixer. Pour into pan.
  3. On middle rack, bake 15-20 minutes for rectangular pan or 25-30 minutes for square pan, until golden brown and toothpick comes out clean.
  4. Let stand 5-10 minutes and serve warm with honey if desired.

This is a healthy version of cornbread.


The cilantro is a great idea, for a change of pace. :o) I always use fresh corn in my cornbread, too! Instead of regular milk, I usually put in Evaporated Milk...makes it very rich. If you're gonna do cornbread, go all the way with it!! :o)
