Date And Walnut Tea Loaf

- 200 grams stoned dates, chopped shopping list
- 1 tsp bicarbonate of soda shopping list
- 100 grams cold butter, cut into pieces shopping list
- 280 grams self rising flour, sifted. shopping list
- 50 grams chopped walnuts shopping list
- 100 grams dark muscovado sugar shopping list
- 1 egg, beaten shopping list
- 2 tbsp demerera sugar. shopping list
- 12 date halves shopping list
How to make it
- Mix the dates and soda in a large bowl with a pinch of salt. Pour in
- 300ml hot water, stir well and leave to cool completely.
- Preheat oven to 375F.Butter a 1 kg loaf tin and line the base and two long sides.
- Mix the butter and the flour in a food processor till it resembles coarse breadcrumbs.
- Stir in the walnuts and muscavado sugar till evenly combined.
- Tip the flour mixture and the egg into the cooled dates. Beat well to mix, then pour into the prepared tin and sprinkle the demerera sugar on top. Arrange dates halves over top in a decorative way. Bake for 1 hour or until a skewer come out clean. Cool in tin for 5 minutes, invert on a wire rack to cool.
