  • 200 grams stoned dates, chopped
  • 1 tsp bicarbonate of soda
  • 100 grams cold butter, cut into pieces
  • 280 grams self rising flour, sifted.
  • 50 grams chopped walnuts
  • 100 grams dark muscovado sugar
  • 1 egg, beaten
  • 2 tbsp demerera sugar.
  • 12 date halves

Directions
  1. Mix the dates and soda in a large bowl with a pinch of salt. Pour in
  2. 300ml hot water, stir well and leave to cool completely.
  3. Preheat oven to 375F.Butter a 1 kg loaf tin and line the base and two long sides.
  4. Mix the butter and the flour in a food processor till it resembles coarse breadcrumbs.
  5. Stir in the walnuts and muscavado sugar till evenly combined.
  6. Tip the flour mixture and the egg into the cooled dates. Beat well to mix, then pour into the prepared tin and sprinkle the demerera sugar on top. Arrange dates halves over top in a decorative way. Bake for 1 hour or until a skewer come out clean. Cool in tin for 5 minutes, invert on a wire rack to cool.

Pardon my ignorance, Ahmed but what is demerara sugar? I don't think we have it here, unless its called some other name too... Appreciate your help on this. :)

Good Morning Ahmed and thank you for the memory nudge. My Mother often made a Date and Nut loaf that was out of this world!!! I was so very fortunate in that my parents were worldly people. We enjoyed international cuisines and in doing so, we were taught the many different cultures.
I prefer Demerara sugar in coffee and tea but I have never used it in my baking. I am looking forward to preparing your Date and Nut Tea Loaf.
To answer tcvillegas question about Demerara Sugar.
From Wikipedia;
Demerara is used as the generic name of a type of specialty raw cane sugar often used in home baking and in sweetening coffee. Demerara, sometimes spelled demerera, is normally brown in colour—the natural colour of cane sugar. It takes its name from the Demerara colony in Guyana, which was the original source of this type of sugar, but is produced today mainly in Mauritius.
