How to make it

  • Separate eggs. Beat egg whites until stiff and set aside.
  • Mix yolks with flour, salt, and cottage cheese.
  • Gently fold the egg whites into the yolk-flour-cheese mixture.
  • Fry like regular pancakes on a greased pan. (I like to keep them in the oven on low as I make them so everyone ends up with a warm one!)
  • Makes about 24 small pancakes. Serve topped with applesauce or jam, or just enjoy plain.

    In Russia we called cottage cheese pancakes "syrniki" which means cheesy pancakes. The recipe is similar as yours but we add 3-4 tablespoon sugar and serve with jam or sour cream. Best for the breakfast!!
