Pumpkin-Pecan Whoopie Pies

- cookies shopping list
- 2 1/2 c All Ppurpose flour shopping list
- 1 t ground cinnamon shopping list
- 2 t ground ginger shopping list
- 1/2 t ground mace shopping list
- 1 t salt shopping list
- 1 t baking powder shopping list
- 1 t baking soda shopping list
- 2 sticks butter, room temp shopping list
- 2 c packed brown sugar shopping list
- 3 large egg yolks (reserve 1 egg white) shopping list
- 2 c canned pumpking shopping list
- 3/4 c finely chopped pecans shopping list
- FILLING shopping list
- 1 1/2 sticks butter, room temp shopping list
- 3 c powdered sugar shopping list
- 2 t vanilla shopping list
- 1 egg white shopping list
- 1 pinche each: ground cinnamon, ground ginger, ground mace shopping list
How to make it
- COOKIES
- Preheat oven to 350
- Grease 2 baking sheets
- In small bowl, stir together flour,cinnamon, ginger, mance, salt, baking powder and baking soda, set aside
- In the bolw of an elelctric mixer, cream the butter and brown sugar
- Add egg yolks one at a time, mixing well after each addition
- Sitr in pumpkin and pecans
- Mix well
- Add flour mixture, stir until just combined, do not overmix
- Drop by heaping tablespoonfuls on to greased baking sheets, leaving 3 inches between each
- When baking sheets are full, smack them on the table to slightly flatten cookies
- Bake 11-12 minutes, until lightly browned
- Let cool completely on wire rack
- FILLING
- Cream butter until fluffy and pale with elelctric mixer
- Add powdered sugar and mix until incorporated
- Mix in remaining ingredients
- Beat until smooth
- Spread filling on half of the cookies
- Top with remianing cookies
- Makes 12-15
