How to make it

  • In a large bowl, combine the first six ingredients.
  • In a small bowl, combine bananas, oil and egg.
  • Stir into dry ingredients just until moistened.
  • Fold in chocolate chips.
  • Fill greased or paper lined muffin cups three fourths full.
  • Bake at 350 deg F for 20-25 minutes or until muffins test done.

    These were great, the kids loved them! Like another reviewer below, I found the batter quite stiff and dry so I added a splash of milk to loosen it slightly as I was finishing folding the dry ingredients in. I think it could use a little more oil or perhaps another egg. But a splash of milk worked! It came out moist and fluffy with a perfect balance of chocolate and banana flavor!

    My daughter will be home from school in 17 mins and we are making these tonight! She is a school trip tomorrow and she will be much happier with a couple of these in her lunch box, as she is out until 9pm.

    I'm so glad you liked them, Wendy! I just wish i could get my kids to leave a few bananas untouched so they could get nice and overripe--then I could make these more often!
