I got this recipe years ago in a cooking newsletter. These are so easy, and the kids love them. I usually make a double batch. You can pop a cooled muffin in the microwave for 30 seconds to melt the chocolate chips again. mmm!

Ingredients
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/4 cup baking cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 1/3 cups mashed ripe banana
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 cup semisweet chocolate chips

Directions
  1. In a large bowl, combine the first six ingredients.
  2. In a small bowl, combine bananas, oil and egg.
  3. Stir into dry ingredients just until moistened.
  4. Fold in chocolate chips.
  5. Fill greased or paper lined muffin cups three fourths full.
  6. Bake at 350 deg F for 20-25 minutes or until muffins test done.

I just made these yesterday and my family loved them! Very great, especially as a morning snack for my little sister.

Alterations


try it with vanilla


If you would like to make these vegan, which I did for a friend, this egg substitute worked very well (1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder).


try substituting applesauce for the 1/3 veg oil.sprinkle extra chocolate chips on top of batter before baking. You can make this into a chocolate chocolate chip banana loaf, and bake at 350 F for
50 minutes or until done. Substitute 1 cup chocolate chips for 1/2 choc chips & 1/2 peanut butter chips. Also you can add a splash of your favorite flavored syrup, or vanilla.
There are so many ways to jazz up these muffins to fit anyone's taste.
