How to make it

  • soften yeast in lukewarm water
  • dissolve butter,sugar and salt in scalded milk
  • cool to lukewarm add yeast and mix well
  • put 1/2 of the flour in a large mixing bowl; make a well in the center and pour the liquid in,add the egg white and stir well
  • start adding the rest of the flour to make a soft dough that can be turned out on a floured surface
  • knead until smooth
  • place in a well greased bowl turning to coat both sides,cover and let rise to double in size
  • knead again and devide into quarters
  • roll each into a long rope.cut into 6" pieces and form into a donut
  • let stand onboard for 10 minutes.bring a pot of water just under boiling and drop bagels in cook on each side
  • remove from water and place on a greased sheet
  • beat yoke with 1 ts. water and brush tops.
  • sprinkle withe course sale or dried onions
  • bake at 400F for about 15 minutes.makes about 2 dozen
