Mexican Breakfast Casserole Recipe
This casserole is great when having guests over and not wanting to belabor over breakfast on a weekend. Simply mix it all together and put it in the oven. Easy, not too fattening, and yummy.

Ingredients
  • 1 1/4 c. egg beaters
  • 1 can diced green chilis
  • 1 c. low-fat colby-jack cheese, grated
  • 12 oz. fat-free cottage cheese
  • 1/4 c. flour
  • 1/4 t. baking powder
  • salt and pepper to taste (I like 1 T. each)

Directions
  1. Preheat oven to 350 degrees.
  2. Beat all of the above together.
  3. Bake in a greased glass square pan for 45 minutes.

Seems like an awful lot of salt and pepper??? 1 Tablespoon each??? Had to ask - looks good otherwise. Think I will use no more than a teaspoon...

I'm not sure what makes this Mexican... There aren't any special ingredients that would suggest this is something unique to Mexico. I'm a bit disappointed.
