Gluten-free Baked Oatmeal

- 1/4 cup extra virgin olive oil shopping list
- 1/2 cup raw honey (diabetics may use sugar Subs) shopping list
- 1 organic egg shopping list
- 1/2 cup Soy, almond, rice or Goat milk shopping list
- 1 tsp aluminum free baking powder shopping list
- 1/2 tsp sea salt shopping list
- 1-1/2 cups gluten Free rolled oats (Bob's Red Mill) shopping list
- 1 apple, Sliced shopping list
How to make it
- > Preheat oven to 350°F. Grease or spray an 8" x 8" baking pan.

- > Wash and slice apple. Layer on the bottom of the pan. (Optional:
- > sprinkle with cinnamon sugar). Mix oil, egg, and honey together
- > until well blended. Stir in milk. Add baking powder and salt and
- mix
- > again. Stir in oatmeal.

- > Pour oatmeal mixture over apples and spread evenly. Bake for 30
- > minutes, or until the oatmeal begins to brown at the edges. Cut
- into
- > four squares and serve with milk or real maple syrup. Makes 6

This was wonderful! It almost had a buttery taste. I used plain rice milk and I used blue agave instead of honey. My children think it is great too! Yay!
