Ingredients
  • 1/4 cup extra virgin Olive Oil
  • 1/2 cup raw honey (diabetics may use Sugar Subs)
  • 1 organic Egg
  • 1/2 cup Soy, almond, rice or Goat Milk
  • 1 tsp aluminum free Baking Powder
  • 1/2 tsp Sea Salt
  • 1-1/2 cups Gluten Free Rolled Oats (Bob's Red Mill)
  • 1 Apple, Sliced

Directions
  1. > Preheat oven to 350°F. Grease or spray an 8" x 8" baking pan.
  2. >
  3. > Wash and slice apple. Layer on the bottom of the pan. (Optional:
  4. > sprinkle with cinnamon sugar). Mix oil, egg, and honey together
  5. > until well blended. Stir in milk. Add baking powder and salt and
  6. mix
  7. > again. Stir in oatmeal.
  8. >
  9. > Pour oatmeal mixture over apples and spread evenly. Bake for 30
  10. > minutes, or until the oatmeal begins to brown at the edges. Cut
  11. into
  12. > four squares and serve with milk or real maple syrup. Makes 6
  13. > Servings.

  15. > *Other fruit may be used such as canned pineapple chunks, frozen
  16. > peach slices or frozen blueberries.
