How to make it

  • Heat oil in a large heavy skillet over medium heat.
  • Add the onion and garlic and cook until limp.
  • Remove from the pan.
  • Add the beef and brown well, adding extra oil if necessary. Cook in batches in order to brown well on each side.
  • Move meat and onion and garlic to slow cooker.
  • Deglaze the bottom of the skillet with the tomatoes and green chiles, the juice will loosen the good stuff from the bottom of the skillet.
  • Add the herbs and spices to the tomatoes. Stir a minute.
  • Add to slow cooker liner.
  • Add sugar and olives.
  • Cover and cook on low heat 5 - 6 hours.
  • Put cooked hot rice in large shallow bowl.
  • Ladle braised beef over the top.
  • Top with the peas.
