Delectable slow cook or tender braised beef with super flavors. You can serve it over noodles, but I like rice and green peas best.

Ingredients
  • 3 tbsp of olive oil
  • 1 medium to large yellow onion chopped
  • 3 large garlic cloves minced
  • 2 lbs of ground chuck cut in cubes
  • 1/2 teaspoon of ground coriander
  • 1/2 teaspoon of ginger
  • 1/4 tsp of red pepper flakes
  • 1/2 tsp of oregano
  • 1/2 tsp of salt
  • 2 10oz cans of tomatoes with green chiles
  • 3 tbsp of cilantro leaves, chopped
  • 2 tsp of brown sugar
  • 1/3 cup of sliced green salad olives
  • 3 cups of rice, cooked
  • 1 1/2 cup of tiny green peas, thawed

Directions
  1. Heat oil in a large heavy skillet over medium heat.
  2. Add the onion and garlic and cook until limp.
  3. Remove from the pan.
  4. Add the beef and brown well, adding extra oil if necessary. Cook in batches in order to brown well on each side.
  5. Move meat and onion and garlic to slow cooker.
  6. Deglaze the bottom of the skillet with the tomatoes and green chiles, the juice will loosen the good stuff from the bottom of the skillet.
  7. Add the herbs and spices to the tomatoes. Stir a minute.
  8. Add to slow cooker liner.
  9. Add sugar and olives.
  10. Cover and cook on low heat 5 - 6 hours.
  11. Put cooked hot rice in large shallow bowl.
  12. Ladle braised beef over the top.
  13. Top with the peas.
