Boursin Sun-Dried Tomato Stuffed Chicken Breasts

An easy, different way to serve chicken.
Ingredients
- 4 boneless, skinless chicken breasts, pounded flat shopping list
- 1 pkg boursin cheese shopping list
- 6 sun-dried tomatoes, hydrated and finely chopped shopping list
- E.V.O. O. shopping list
- about 1/2 tsp dried basil or to taste shopping list
How to make it
- Spread Boursin on flattened chicken to cover
- Sprinkled chopped Sun-Dried tomatoes over cheese
- Roll up from short side and secure with wooden toothpick or
- Place seam side down in oiled baking dish
- Brush with about 1/2 the E.V.O.O. mixed with basil
- Bake at 350 for 30 - 40 minutes or until juice runs clear basting with Olive oil/basil mixture once during baking
- Serves 4
