How to make it

  • Soak Beans overnight in cold water.
  • Drain
  • Cook in fresh water in Pan, bring to boil and then simmer until thoroughly cooked. Check if ready in 45 minutes. Beans vary in the way you like them.
  • Drain beans
  • Peel and slice the onion and crush the garlic.
  • Add to the beans.
  • Mix together the Vinegar, oil, mustard, sugar, tomato puree and some sea salt and freshly ground black pepper and pour this mixture over the beans stirring well.
  • As with most bean salads I think this is best served very cold and it is certainly worth making this in advance so that the flavours have time to blend.

    Yummy and it definitely needs the marinating time to infuse the yummy vinegar tartness in the beans. Love this, very good. Another lunch box treat.
