Ingredients

How to make it

  • Mix ingredients together in a large bowl.
  • Use your favorite kind of lettuce and croissants, puff paistry or even Hawaiian bread to make great sandwiches for a brunch or finger sandwiches for a luncheon.
  • Or make a big bowl, grab a pack of crackers and lock the damn door! It's addictive!

Honey, I can remember the days when I worked at Bennigan's and the manager would stand behind me with a stopwatch to see how long it took me to carve the pineapple boats, tapping his impatient foot, instead of pitching in to help during the lunch rush. No wonder they went bankrupt. But I do love a chicken salad in a pineapple boat. Good recipe, dearie.

I've always used grapes, but I will definitely try your method with pineapple - it sounds delish, and I'll remember to lock that door!!
