How to make it

  • Preheat grill on high.
  • Cook chorizo in a small saucepan of boiling water for 3 minutes. Drain well.
  • Use sharp knife to slice each sausages into 12 slices.
  • Heat 2 tbs of oil in a saucepan over medium heat.
  • Add onion, stirring until soft for 3 minutes.
  • Add garlic, tomato and paprika. Stirring for another 3 to 5 minutes.
  • Stir in rice and stock, bring to boil.
  • Cover with a tight-fitting lid and reduce heat to low.
  • Cook for 15-18 minutes.
  • Remove from heat and set aside, covered for 5 minutes.
  • Alternately thread chorizo and prawns among the skewers.
  • Place skewers on an oiled oven tray.
  • Brush with oil and season with salt and pepper.
  • Cook under preheated grill, turning occasionally, for 7 minutes or until prawns change color.
  • Serve prawn and chorizo skewers with rice.
  • TIP: You can add spinach to the cooked rice, fluff it together and set it aside for 5 minutes. To top it off, you can sprinkle some pine nuts around it as well.

    Try any type of gourmet sausages I suppose. As long as they are hard. Good luck with your pilaf. ;)

    The chorizo we get here is soft... it would not work this way.. what other type sausage would work?
