How to make it

  • Preheat oven to 375 degrees.
  • Grease 9- by 9- by 2-inch square pan.
  • Combine flour, sugar, lemon rind, nutmeg and salt in large bowl. Cut in butter with pastry blender until mixture is crumbly. Reserve 1 cup. Pat remaining mixture evenly into prepared pan.
  • Spread preserves evenly over dough, leaving 1/4-inch border around edge. Sprinkle with reserved flour mixture.
  • Bake for 40 minutes or until lightly browned. Cool in PAN on wire rack.
  • Cut into bite-sized bars. Store for up to 1 week in air-tight container.
  • I refrigerate mine so they don't mold and take them out to warm up before eating.
  • Makes 16 bars.

    This is a great recipe to make in a hurry. My next door neighbor just gave me a huge box of delicious, ripe peaches, and I'm going to cook a few down to make my own filling. It should be great. Obviously, this recipe should work with apples, pears, peaches, or other fruits.
