How to make it

  • 1.Preheat oven to 350 degrees F and place rack in center of oven. 2.Butter and lightly dust pans with flour .
  • 3.Peel and finely grate the carrots. Set aside.
  • 4.In a separate bowl, whisk together the flour, baking soda, baking powder, salt, nutmeg and ground cinnamon. Set aside.
  • 5.In bowl of electric mixer, with the paddle attachment beat the eggs until frothy. Gradually add the sugar and beat until the batter is thick and light colored. Add the oil in a steady stream and then beat in the vanilla the extract and the Nocello. Add the flour mixture and beat just until incorporated.
  • 6. Fold in the grated carrots, apples, raisins and chopped nuts. Evenly divide the batter between the two prepared pans and bake 35 to
  • 45minutes or until a toothpick inserted in the center comes out clean.
  • 7.Remove from oven and let cool on a wire rack. After about 5 -10 minutes invert the cakes onto the wire rack.

    Cream Cheese frosting is what everyone uses with carrot cake. I like it without a frosting but if I had to frost this cake I would try the white chocolate mousse that I used with the "white chocolate mousse macadamia cake"I made.
