How to make it

  • combine flours.
  • in a large bowl,thouroughly mix 2 1/3 cups of flour mixture,sugar,salt,cereal,caraway seed,coffee powder,onion powder,fennel seed and undissolved yeast
  • in a sauce pan combine 2 1/2 cups of water,vinegar ,molasses,
  • choccolate and butter
  • heat liquid mixture over low heat till warm(120-130 deg.)
  • butter and chocolate doesn't have to be melted
  • slowly add liquid to dry ingredients and beat with a mixer for 2 minutes on high speed,scraping down sides of the bowl occasionally
  • add 1/2 cup more of flour and beat for 2 minutes more
  • stir in enough additional flour to make a soft dough
  • turn out on a lightly floured board and cover and let rest 15 minutes
  • knead dough until smooth and elastic(about 10-15 minutes)dough may be stickey
  • place dough in a well greased bowl and thur to grease all surfaces
  • cover and let raise until double in bulk
  • punch down and turn out on a floured board shape into two balls abour 5" around
  • place each ball in the middle of a well greased 8" round cake pan
  • cover and let rise until doubled in bulk
  • bake at 350 F. for 40-45 minutes
  • meanwile ,combine cornstarch with 1/2 cup of cold water,cook over mediym hear,stirring constantly,to a boil.boil for 1 minute,still stirring
  • as soon as bread is baked brush cornstarch over loafs and bake 2-3 minutes longer or until glaze is set.
  • remove from pans and cool on wire racks
