Ingredients
  • 2 (21-ounce) cans low-sugar cherry pie filling
  • 1 teaspoon almond extract
  • ¼ cup all-purpose flour
  • ¾ cup whole-wheat or spelt flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ¼ cup orange juice
  • ¼ cup water
  • 1 tablespoon slivered almonds
  • 1 tablespoon granulated sugar
  • 1 teaspoon grated orange peel
  • ½ teaspoon ground ginger

Directions
  1. Preheat oven to 350F.
  2. Combine cherry filling and almond extract in an un-greased 8x8x2-inch baking pan.
  3. Combine flours, sugar and baking powder in a large mixing bowl; mix well.
  4. Add orange juice and water, stirring just until dry ingredients are moistened.
  5. Drop batter by tablespoons over cherry filling, making at least 8 dumplings.
  6. For topping: Combine almonds, sugar, orange peel and ginger in a small bowl; mix well. Sprinkle over dumplings.
  7. Bake 30 to 35 minutes, or until filling is bubbly and dumplings are brown.
