How to make it

  • Place the onion in a bowl, cover with cold water and leave for 1 hour. Drain well. Preheat oven to 415ºF. Line an 8" springform pan with aluminum foil. Grease the foil.
  • Melt the butter in a small saucepan, add the garlic and set aside. Place a layer of potato over the bottom of the pan, followed by layers of onion, butter, mozzarella and Parmsan. Repeat ingredients, finishing with potato and keeping a bit of butter to drizzle on at the end. Season the layers as you go. Spoon the milk over the top.
  • Bake for 1 hour, or until the top is golden brown and the potatoes are tender. If the top is overbrowning before the potatoes are done, cover with foil. Cool for 10 minutes. Unclip the bottom of the pan, peel off the foil and transfer to a warm plate. Cut into wedges for serving.
