  • 2 eggs
  • 1 tsp. pure vanilla extract
  • 2-1/2 tsps. sugar
  • 1/4 tsp. salt
  • 1 cup milk
  • 1 cup All-purpose flour
  • Oil to fill a heavy 3-quart deep fryer three-quarters full
  • 1 cup sugar (either granulated or confectioners')

Directions
  1. Beat the eggs and add vanilla, 2 tsp. sugar and the salt.
  2. Add the milk and flour and beat until smooth.
  3. Heat the oil in a heavy 3-quart deep fryer.*
  4. Heat the rosette iron in the oil for a few minutes, then remove, shake off any excess oil and dip the iron into the batter (do not let the batter cover the top of the iron).
  5. Dip the iron in the hot oil and cook until a light golden brown.
  6. Remove from the oil, shake off excess, and carefully loosen the rosette from the iron with a fork or by tapping it lightly.
  7. Drain rosettes on paper towels.
  8. When rosette has cooled, dip in 1 cup sugar in a shallow bowl.
  9. Note: Oil should be hot enough to turn a piece of dry bread crust brown.
  10. You may need to experiment with the temperature.
