Chinese Almond Cookies

- 2 1/2 cups flour shopping list
- 1/2 tsp salt shopping list
- 3/4 tsp baking powder shopping list
- 1 cup shortening shopping list
- 1 1/2 cups sugar shopping list
- 1 egg shopping list
- 1 tbsp water shopping list
- 1 tsp almond extract shopping list
- 1/2 cup finely chopped coconut shopping list
- 1/4 cup blanched almonds, halved shopping list
How to make it
- sift together flour, salt and powder. cream shortening and sugar. Beat in egg, water and almond extract. Add sifted ingredients and coconut to creamed mixture. (it may be necessary to knead the dough a few times to mix thoroughly) shape into balls, using a rounded teaspoon of dough for each. Place on cookie sheet. Flatten with bottom of a glass. Top with almond 1/2. bake 350 degrees for 12 to 15 minutes.
