baked chicken breasts to perfection

- 2 1 1/2# whole chicken breasts with skin,rinced and dried shopping list
- 2 Tbs. soft butter shopping list
- 1/2 tsp. salt shopping list
- pepper as needed shopping list
- 3 Tbs. vegetable oil shopping list
How to make it
- preheat oven to 450F.
- line bottom of broiler pan with heavy foil
- place broiler rack on top
- in a small bowl mix salt and butter
- gently free skin an both sides of breasts and with a small spoon insert 1/4 of the mixture to the center of each breast and smooth it around,coating the breasts unde the skin
- oil outside of breasts with 1 1/2 tsp. oil each
- salt and pepper underside of chicken
- use only pepper on top
- spread ribs apart so breast rests on the ribs and thay don't fold under.
- bake 35-40 minutes till done
- the following is why this is a varitable recipe:
- add1 Tbs. chopped kalamata olives-2 tsp. chopped parsley and 1 tsp. lemon zest to butter-follow above resipe
- add: 2 tsp. chopped chipolte in adoba sauce,1 tsp. ground cumin and 2 tsp. chopped cilantro to butter mix
- add:2 cloves of minced garlic,2 tsp. fresh rosemary,minced and 1 tsp. lemon zest ect.
- add: 2 Tbs. dried porcini mushrooms,reconstuded with boiling water,drained and chopped finley and 1 tsp. each fresh thyme and rosemary to butter ect.
