How to make it

  • Chop the garlic and dice and brown the onion in a skillet with a little oil. Put into crock pot.
  • Cut the pork into cubes. Add to skillet and cook until just brown on sides. Put into crock pot.
  • Deglaze pan with beer and pour into crock pot.
  • Pour green enchilada sauce, green chili's, cumin, salt and pepper into crock pot.
  • Give it a good stir.
  • Cook on High for 1 hour.
  • Switch to Low and cook for another 7 hours.
  • (crock pot liner works great)
  • Stir in 1 cup sour cream at the end of cooking before serving.
  • Serve with refried beans and rice. Makes Excellent burritos!

    This was delicious and adaptable. I used bone in country pork ribs, browned well, and roasted hatch green chiles as this is what we had on hand. I didn't have tortillas, so I served it with a scoop of steamed rice. We already want the leftovers for the next day!

    I made this for the first time ever on Super Bowl Sunday. It was a hit! Super easy too! I only had a cut up boneless pork chops. I used michelob ultra beer, but I am not sure if it really added to the flavor though. I also had canned retried beans and a Spanish rice using minute rice and salsa. Easy and everyone loved the meal! They said it was better than our favorite nice Mexican restaurant.

    Outstanding recipe, and easy for a novice. I forgot to add the sour cream at the end of the cooking cycle and nobody missed it. A friend who came by said it was one of the best things he'd eaten in recent memory. Thanks!
