Blackberry Quick Bread Recipe
Not your usual quick bread. Blackberry bread with a topping.

Ingredients
  • Bread:
  • ¾ cup sugar
  • ½ cup milk
  • 4 Tbsp unsalted butter, room temp.
  • 1 large egg
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 cups fresh blackberries
  • Topping:
  • ½ cup sugar
  • ⅓ cup all purpose flour
  • 4 Tbsp unsalted butter, room temp.
  • ½ tsp cinnamon

Directions
  1. Preheat oven to 375°F.
  2. Oil a 9” x 5” loaf pan.
  3. Stir topping ingredients together in small bowl.
  4. Set aside.
  5. In medium bowl, stir sugar, milk, butter and egg together until smooth.
  6. In another bowl, toss the flour with the baking powder and salt.
  7. Stir this into the wet ingredients.
  8. Fold in blackberries.
  9. Transfer batter to the prepared pan and sprinkle with the topping.
  10. Bake until topping is deep golden and has formed a thick crust (approximately 50 minutes).
  11. Cool in pan for 5 minutes, then transfer to a wire rack to continue cooling.

Bet this is good.I'll use blueberries instead of blackberries though.
