Blackberry Quick Bread

- Bread: shopping list
- ¾ cup sugar shopping list
- ½ cup milk shopping list
- 4 Tbsp unsalted butter, room temp. shopping list
- 1 large egg shopping list
- 2 cups all purpose flour shopping list
- 2 tsp baking powder shopping list
- ¼ tsp salt shopping list
- 2 cups fresh blackberries shopping list
- Topping: shopping list
- ½ cup sugar shopping list
- ⅓ cup all purpose flour shopping list
- 4 Tbsp unsalted butter, room temp. shopping list
- ½ tsp cinnamon shopping list
How to make it
- Preheat oven to 375°F.
- Oil a 9” x 5” loaf pan.
- Stir topping ingredients together in small bowl.
- Set aside.
- In medium bowl, stir sugar, milk, butter and egg together until smooth.
- In another bowl, toss the flour with the baking powder and salt.
- Stir this into the wet ingredients.
- Fold in blackberries.
- Transfer batter to the prepared pan and sprinkle with the topping.
- Bake until topping is deep golden and has formed a thick crust (approximately 50 minutes).
- Cool in pan for 5 minutes, then transfer to a wire rack to continue cooling.

I made this today, 12/19/09, and while it was easy to make, it didn't depan very well. In inverting the pan/loaf onto a board and then back over onto a cooling rack parts of the topping fell off.
Perhaps putting a foil "sling" into the pan befor...morehammster in San Diego loved it

Well it tastes good. However, more of the topping falls off with each slice.
