Ingredients
  • 3 lbs. new potatoes boiled, quartered, unpeeled
  • 1 pound of Polish kielbasa, sliced diagonally
  • 1/4 cup of chopped drained capers
  • 1/2 cup of julienned pimentos
  • 1 cucumber, peeled and thinly sliced
  • 1 bunch of scallions, sliced on the diagonal, use some of the green part
  • 1 egg plus 1 egg yolk
  • 1 teaspoon of dry mustard
  • 1 teaspoon of freshly squeezed lemon juice
  • 1/4 teaspoon of red wine vinegar
  • 2 dashes of favorite hot sauce
  • 1/2 cup of olive oil
  • 1 cup of light salad oil
  • 2 tablespoons of Dijon mustard
  • salt and pepper (fresh ground black pepper, if you please)

Directions
  1. Put the potatoes, kielbasa, capers, pimentos, cucumbers and scallions in a large bowl.
  2. In a blender or food processor, add the egg and egg yolk, dry mustard, lemon juice, hot sauce and vinegar.
  3. Process 10 seconds.
  4. Add oil very slowly in a steady stream (making mayo here).
  5. Fold in dijon mustard and adjust the salt and pepper level to taste.
  6. Pur over the salad ingredients and toss very well.
