Tailgate Potato Salad

- 3 lbs. new potatoes boiled, quartered, unpeeled shopping list
- 1 pound of Polish kielbasa, sliced diagonally shopping list
- 1/4 cup of chopped drained capers shopping list
- 1/2 cup of julienned pimentos shopping list
- 1 cucumber, peeled and thinly sliced shopping list
- 1 bunch of scallions, sliced on the diagonal, use some of the green part shopping list
- 1 egg plus 1 egg yolk shopping list
- 1 teaspoon of dry mustard shopping list
- 1 teaspoon of freshly squeezed lemon juice shopping list
- 1/4 teaspoon of red wine vinegar shopping list
- 2 dashes of favorite hot sauce shopping list
- 1/2 cup of olive oil shopping list
- 1 cup of light salad oil shopping list
- 2 tablespoons of Dijon mustard shopping list
- salt and pepper (fresh ground black pepper, if you please) shopping list
How to make it
- Put the potatoes, kielbasa, capers, pimentos, cucumbers and scallions in a large bowl.
- In a blender or food processor, add the egg and egg yolk, dry mustard, lemon juice, hot sauce and vinegar.
- Process 10 seconds.
- Add oil very slowly in a steady stream (making mayo here).
- Fold in dijon mustard and adjust the salt and pepper level to taste.
- Pur over the salad ingredients and toss very well.
