Ingredients
  • 2 lbs beef stomach (tripe) with fat removed
  • 1/2 lb pork sausage
  • 1 1/2 cup tomato sauce
  • 1/2 cup water
  • 2 medium size potatoes cubed
  • 2 medium size carrots cubed
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 dried bay leaf
  • 1 teaspoon sugar
  • salt and pepper to taste
  • oil for sauteeing

Directions
  1. Saute garlic and onions. Add the tripe and cook until no longer pink.
  2. Add the pork . Season with salt and pepper. Saute for about 15 minutes or until sausage is cooked
  3. Add the bay leaf and pour the tomato sauce. Add water and let boil.
  4. Simmer for about 15 minutes or until the meata are well cooked and sauce slightly thickened.
  5. Add the carrots and potatoes. Simmer until the veggies are tender.

Boy! You don't see this in my part of the country much!


This is on the menu of most of the Mexican restaurants around here but they only serve it on Sundays. Your recipe sounds great will have to give it a try. Thanks for posting.


This the first recipe, for manudo, that I've ever seen without hominy,will have to try.

Down here... It is the hangover cure.. that's why it is served on Sundays! I will post mine too.. who knows there might be someone with a BIG hangover!!

There's no tripe in my menudo recipe. those are pork fat. should have taken a mexican menudo. thats filipino one.

Hi! I will try this but since I'm trying my best not to eat meat, so I will use white chicken meat and hotdog to replace the liver. I'm pinay and chboogs right, theres no tripe too in my menudo recipes but it still sounds good! THanks!
