Scoobs Meatloaf Masterpiece Recipe

I cooked this the other night for my family. One person that is picky and hard to please said "No offense to grandpa, but this is the best meat loaf I ever had." Need the Scoob say more?

Ingredients
- * 1.5 lbs ground beef
- * 1 package Lipton onion soup
- * 3/4 cup ketchup
- * 2 eggs
- * 1 cup cooked brown rice
- * 2 tsp mustard
- * 1 lb. shredded mozz cheese
Directions
- Preheat oven to 325 degrees.
- Mix all ingredients together but cheese.
- After thoroughly mixed, roll out onto wax paper in a rectangle
- Spread cheese on top evenly.
- Roll up jelly-roll style and place in a loaf pan.
- Seal edges so the cheese doesn't leak out.
- Bake for 1 hour and 40 minutes.
- Serve.
- Let the mmmmmm's begin

My mom uses lipton soup mix for her meatloaf too! I cant wait to try it with rice what a good addition! Thanks for the Scoob-style loaf!

Your'e quite welcome. Don't forget the cheese in the middle. I forgot to add that I doubled this recipe and it still turned out excellent. I also used Famous Dave's Goergia Mustard instead of normal mustard.

Sounds really good! However, I don't have any brown rice on hand so I am putting oatmeal and wheat germ in place of the rice. At this very moment, the oven is preheating and I just rolled the cheese into the loaf.
