Ingredients
  • 2 cups almond meal / flour
  • 1 cup superfine sugar
  • 3 egg whites
  • 1 tsp almond extract
  • ½ tsp vanilla

Directions
  1. Preheat oven to 300F. Line baking sheets with parchment paper (Note: Greasing the sheets instead does NOT work here).
  2. Whisk together the almond meal and sugar.
  3. Beat in the egg whites, almond and vanilla extracts until a smooth dough forms.
  4. Using a teaspoon, drop dough onto baking sheets, about 1” apart.
  5. Bake 25 minutes, then turn off the oven.
  6. Cool the cookies 1 hour in turned off oven, then remove from sheets and store in a dry place.
