How to make it

  • Preheat oven to 300F. Line baking sheets with parchment paper (Note: Greasing the sheets instead does NOT work here).
  • Whisk together the almond meal and sugar.
  • Beat in the egg whites, almond and vanilla extracts until a smooth dough forms.
  • Using a teaspoon, drop dough onto baking sheets, about 1” apart.
  • Bake 25 minutes, then turn off the oven.
  • Cool the cookies 1 hour in turned off oven, then remove from sheets and store in a dry place.
