How to make it

  • Saute onion in butter until translucent
  • Add herbs and saute until wilted
  • In large bowl, combine onion and herb mixture with spinach, lemon juice, milk, cheeses and seasonings
  • Mix well
  • Separate eggs, stir yoks into spinach mixture
  • Beat whites until stiff peaks are formed and gently fold into spinach mixture
  • Pour into pie shell and bake at 325 degrees for 35-40 minutes or until quiche is puffed and lightly browned
