Spinach Feta Puff Quiche

- 1 tablespoon butter shopping list
- 1 small onion, chopped shopping list
- 1/4 cup fresh parsley, chopped shopping list
- 1 teaspoon dill shopping list
- 1 teaspoon basil shopping list
- 10 ounces frozen chopped spinach, thawed, squeezed dry shopping list
- juice of 1/2 fresh lemon shopping list
- 3 tablespoons milk shopping list
- 4 ounces feta cheese, crumbled shopping list
- 1-1/2 cups Swiss chesse, shredded shopping list
- 1/2 teaspoon ground cumin shopping list
- Pinch of nutmeg shopping list
- salt and pepper to taste shopping list
- 3 eggs, separated shopping list
- 9-inch pie shell, unbaked (whole wheat crust is especially good) shopping list
How to make it
- Saute onion in butter until translucent
- Add herbs and saute until wilted
- In large bowl, combine onion and herb mixture with spinach, lemon juice, milk, cheeses and seasonings
- Mix well
- Separate eggs, stir yoks into spinach mixture
- Beat whites until stiff peaks are formed and gently fold into spinach mixture
- Pour into pie shell and bake at 325 degrees for 35-40 minutes or until quiche is puffed and lightly browned
