Saltys Black Bean Soup With Rice

- 1 lb. dried black beans shopping list
- water shopping list
- 2 tbsp. butter shopping list
- 2 med. onions shopping list
- 2 crushed garlic cloves shopping list
- 2 bay leaves shopping list
- 1/2 c. chopped green pepper shopping list
- 1 tsp. ground cumin shopping list
- 3 1/2 c. beef broth shopping list
- 1 Tbsp. cider vinegar shopping list
- 1 tsp. salt shopping list
- hot pepper sauce to taste shopping list
- 3 c. hot cooked rice shopping list
- 4-6 strips smoked bacon shopping list
How to make it
- Wash beans and soak overnight. Drain and reserve liquid.
- In Dutch oven, cook bacon strips. Retain drippings in pot. Crumble cooked bacon into pot. Add butter and allow to melt.
- Add onions, garlic, green pepper, bay leaves, and cumin and sauté until onions are translucent.
- Stir in dry beans and cook three minutes more.
- Pour in beef broth and 1 cup liquid. Simmer partially covered over low heat until beans are tender, 2-3 hours. Add more water to pot if beans become too dry.
- During the last 30 minutes, stir in vinegar, salt, and hot pepper sauce to taste.
- Serve in a soup bowl over hot cooked rice and top with diced raw onion.
