This dish is super easy and a great way to greet unexpected guests. My family loves this dip......it never lasts for long when I make it.

Ingredients
  • 1 can chili without beans (Hormel is my favorite)
  • 1 can black beans, drained
  • 8 oz Colby-Jack cheese, grated or crumbled
  • 2-4 oz sour cream
  • ground cayenne pepper to taste
  • sprinkle of chives

Directions
  1. Mix chili, beans, cheese and pepper in a 9x9 deep casserole dish.
  2. Place in microwave oven and heat on high until cheese is thoroughly melted and mix is creamy smooth (usually 3-3½ minutes), stirring often.
  3. Top with sour cream and chives. Serve hot with tortilla chips.

Made this tonight and was a huge hit!!! Everyone asked for the recipe.

The only thing I did different was to use diced onions instead of chives and I used a spicy chipotle seasoning to give it some extra kick !
