Julios Puerto Rican Potato Omelette Recipe
An old friend gave me his grandmother's recipe for a fabulous Puerto Rican Omelette with potatoes and chiles, etc.

Ingredients
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 tablespoons minced onion
  • 1 minced garlic clove
  • 1 minced Jalapeño chile; seeded
  • 1 tablespoon minced cilantro
  • 5 beaten eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon fine ground black pepper
  • 1 cold boiled new potato; sliced into thin slices
  • 1/2 teaspoon chili powder

Directions
  1. Preheat oven to 350° F.
  2. Use an 8-inch oven-proof skillet.
  3. Over medium heat, heat olive oil and butter until the butter has melted.
  4. In the hot oil, sauté the onion, garlic, Jalapeño chile and cilantro until the onion is transparent. Do Not brown.
  5. Remove from heat and arrange the sautéed vegetables over the bottom of the skillet.
  6. Add eggs beaten with salt and pepper.
  7. Arrange sliced cold potato circles over the surface.
  8. Sprinkle the chili powder on top and put into oven for 10 minutes or until eggs set.
  9. Remove from skillet and slice into 4 servings. Serve with Salsa Casera and sliced avocado.
