Ingredients
  • 4 oz. uncooked angel hair pasta
  • 2tsp. cornstarch
  • 1/4c soy sauce
  • 2Tbs.rice wine vinegar
  • 2Tbs. hoisin sauce
  • 1Tbs. minced fresh gingerroot
  • 1tsp. minced garlic
  • 1lb. boneless,skinless chicken breasts,cut in strips
  • 2Tbs veg oil,divided
  • 2c fresh broccoli florets
  • 1c julienned carrots
  • 1/4c salted peanuts,finely chopped

Directions
  1. Cook pasta according to directions. Meanwhile,in a small measuring cup or bowl,combine the cornstarch,soy sauce,vinegar,hoisin sauce,ginger and garlic until blended;set aside
  2. In a lg. skillet or wok,stir fry chicken in 1Tbs. oil for 5-8mins. or till no longer pink. Remove with slotted spoon. Drain pasta and set aside.
  3. Stir-fry broccoli and carrots in remaining oil for 5-6 mins or till crisp tender. Stir cornstarch mixture and pour into pan. Bring to a boil;cook and stir for 2 mins or until thickened. Stir in chicken and pasta;heat through. Sprinkle with peanuts.

Alterations


Ooo sounds good. Have you tried with thinly sliced steak? My husband loves to have beef over chicken. I usually make recipes with it and then second time with beef.


No problem doing this with steak. It's great!
