Mexican Pralines Recipe

Ingredients
  • 3 cups Sugar
  • 1 cup Buttermilk
  • 1 stick Butter
  • 1/2 tsp Salt
  • 1 tsp Baking Soda in Milk
  • 2 cups broken Pecan pieces
  • 1 tsp Mexican Vanilla

Directions
  1. mix sugar, buttermilk, butter, salt and baking soda together in a large pan.
  2. cook on medium heat to a SOFT boil stage. check by dropping a small amount of the praline mixture into cold water. it should form a small ball.
  3. remove from heat and add pecans and vanilla.
  4. beat until it looses its glaze with a wire whip - approx 5-6 min. mixture should now look "milky".
  5. turn out on wax paper and allow to cool. Yummy!
