Ingredients

How to make it

  • Preheat oven to 350
  • Wash and dry potatoes
  • Toss with oil in large bowl, until coated
  • Lightly roll potatoes in coarse salt, and place on baking sheet
  • Bake 45-50 minutes, until tender
  • Combine sour cream and blue cheese in small bowl
  • Cut a cross in the top of each potato, and press gently with fingertips to open
  • Top with generous spoonful of cheese mixture
  • Garnish with chives

    OMG... I have had these... but did not have the recipe! Thank you, they are soooooooooooo good! So much for diet! Nah... I give myself one day a week to eat what I want... this goes to the top of the list!
