How to make it

  • Cubed cheese
  • Thickly slice garlic
  • Lightly crush peppercorns and coriander seeds
  • Pack feta cheese into a large perserving jar with the bayleaf - interspersing with garlic, coriander/peppercorns, capers, olives, and thyme or oregano sprigs
  • Pour in enough olive oil to cover cheese
  • Close tightly and allow to marinate for 2 weeks
  • TO Serve: Lift out cheese/olives/etc and palce on hot toast, garnish with chopped tomatoes and drizzle some of the flavored oil marinade over all.
