How to make it

  • Pound chicken breast to ¼-inch thickness. Sprinkle each piece on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on each breast. Roll up each breast using toothpicks to secure if necessary. Dredge each in flour, shake off excess, then in egg and finally in bread crumbs. Place seam side down in baking dish that has been sprayed with Pam. Place 1 tablespoon butter on each piece of chicken. Bake at 350° for 35 minutes until juices run clear. Meanwhile, in a saucepan, combine broth and whipping cream; season to taste (salt, pepper, garlic, oregano). Simmer on low stirring until thickened; Pour over chicken.

    I made this yesterday. It was the main course with two side courses -- a four-cheese mashed potato and a waldorf salad. Everyone loved the meal. The mashed potatoes went especially well with the sauce. My husband soaked up all the extra sauce with the potatoes until his plate was entirely clean.

    The one step in the recipe that I forgot to do was to use egg during the breading process. It worked fine without the egg. I just smashed the bread crumbs into the meat until it stuck. So, if you are missing eggs, go for it anyway.

    Your take on this sounds great. I do one at home where I don't have much room in the kitchen. Instead of pounding, I simply bread the chicken cutlets as you do, then brown them on each side and place ham then cheese on top. I finish them in the oven. I'm going to try your sauce the next time. Thanks
