Herbed Roast Beef Recipe
This is a regular for us when on a diet… it is lean and sooooooo good. The leftovers are good on a chef salad. I think it is from Lawry’s not sure. Been using it awhile. USE a meat thermometer

Ingredients
  • 1 beef top round or rump roast about 3 pounds leave fat on top
  • 1/3 cup Dijon mustard
  • 1 ½ teaspoon thyme crushed
  • 1 teaspoon rosemary crushed
  • 1 teaspoon seasoned pepper
  • 1 teaspoon garlic powder with parsley
  • ½ teaspoon seasoned salt

Directions
  1. Brush all sided with mustard
  2. Mix all herbs and seasonings in a small bowl
  3. Put herbs all over roast.. Top and bottom, pushing in
  4. Roast at 325 in a shallow pan, FAT SIDE UP
  5. Roast till temp reaches 135 or 140
  6. Let sit for 15 to 20 minutes, covered with foil
  7. Slice against the grain thin
  8. Serve with baked potatoe wedges and a low cal veggie
  9. This is not that high of calorie or fat… And it’s BEEF!
  10. Great for the beef lovers who are on a diet!
  11. Enjoy!
