Chicken Stuffing Casserole Recipe
This is easy to make and my kids actually love it. They usually turn their nose up at casserole type dishes. Great for using up left over chicken.

Ingredients
  • 2 large potatoes, peeled and cubed
  • 2 medium carrots, coarsely chopped
  • 1 package (8 oz) crushed corn bread stuffing
  • 1/2 cup butter, melted
  • 3 cups cubed cooked chicken
  • 1 can cream of chicken soup, undiluted
  • 1 can cream of celery soup, undiluted
  • 1 cup chicken broth

Directions
  1. Place 1 inch of water in a saucepan, add potatoes and carrots
  2. Bring to a boil
  3. Reduce heat and simmer for 5-7 minutes until crisp tender
  4. Drain and set aside
  5. Toss the stuffing and butter
  6. Spread half in a greased 13x9 baking dish
  7. Top with chicken
  8. In a large bowl combine soups, broth, potatoes and carrots
  9. Spread evenly over chicken
  10. Sprinkle with remaining stuffing mixture
  11. Bake uncovered, at 350 degrees for 40-45 minutes or until heated through

Yum this is a great recipe, thanks for posting, I've made this before and it's very easy and very good.


Delicious comfort food. I need to make this again, since its been a while and its gotten chilly here again. Sounds like a perfect dinner this week and I have everything but the chicken. Thanks for posting it.
