Chicken Stuffing Casserole

- 2 large potatoes, peeled and cubed shopping list
- 2 medium carrots, coarsely chopped shopping list
- 1 package (8 oz) crushed corn bread stuffing shopping list
- 1/2 cup butter, melted shopping list
- 3 cups cubed cooked chicken shopping list
- 1 can cream of chicken soup, undiluted shopping list
- 1 can cream of celery soup, undiluted shopping list
- 1 cup chicken broth shopping list
How to make it
- Place 1 inch of water in a saucepan, add potatoes and carrots
- Bring to a boil
- Reduce heat and simmer for 5-7 minutes until crisp tender
- Drain and set aside
- Toss the stuffing and butter
- Spread half in a greased 13x9 baking dish
- Top with chicken
- In a large bowl combine soups, broth, potatoes and carrots
- Spread evenly over chicken
- Sprinkle with remaining stuffing mixture
- Bake uncovered, at 350 degrees for 40-45 minutes or until heated through
