How to make it

  • Grease a 10-inch Bundt pan and set aside. Combine the flour, baking powder, baking soda, cinnamon and salt, and set aside.
  • Beat the eggs until they are creamy and pale, add the oil in a slow, steady stream while beating. Add the apple juice, honey, brown sugar and apples. Mix well. Beat in dry ingredients with a wooden spoon, then stir in the dates and pecans.
  • Spoon the mixture into the prepared pan, and bake at 375 until a toothpick inserted in the centre comes out clean, about 50 minutes.
  • Let cool 10 minutes, then unmold.
