This is a recipe that Cousin Monk came up with and is delish!

The recipe is just about how Monk described it to me - and believe me - it is absolutely wonderful.
But - this is how I do it...
I have used a ham bone or smoked neckbones in place of the ham hocks.
I take 2 Tbsp of butter in a pan, melt it.
Stir in the seasonings and onions.
Sweat the onions for about 5 minutes.
While I'm doing that I have about 6 cups of water in a pot with whatever meat I'm using and I let that simmer for about 15 - 30 minutes.
Then I pour the beans in the bottom of the crockpot, then add the onion mixture, then pour the meat and stock over top.
Cook until beans are to your liking.

Will get the crockpot going on this. Unusual with the dill, but a great mix actually, with onion, ham hocks, and beans! Pour on the cracked black pepper, and with a skillet of cornbread, this will take you to some places! ;)
