My Sisters Mac N Cheese Golden Oldie

- 1/2 pound(maybe a little more) elbow macaroni shopping list
- 3 Tbsps. butter - NOT margarine shopping list
- 3 Tbsps. flour shopping list
- 1 Tbsp. Keen's powdered mustard (optional) shopping list
- Note: I like to replace the mustard with a dash or 2 of Tobasco sauce! That really adds a nice kick to it. shopping list
- 3 cups 2% or homogonized milk shopping list
- 1 yellow or cooking onion, finely chopped shopping list
- 1/2 tsp. paprika shopping list
- 1 tsp. onion powder shopping list
- 1 large egg, beaten shopping list
- 12 ounces sharp cheddar cheese, shredded shopping list
- 1 tsp. salt shopping list
- 1 tsp. fresh ground black pepper shopping list
- Topping: shopping list
- 3 Tbsps. butter shopping list
- 1 cup seasoned bread crumbs shopping list
How to make it
- Preheat oven to 350 degrees F.
- In a large pot of boiling, salted water cook the pasta to al dente. While the pasta is cooking, in a separate pot, melt butter.
- Whisk in flour and mustard and keep whisking for about 4 minutes. Make sure it's free of any lumps.
- Stir in milk, onion, paprika and onion powder.
- Simmer for 10 minutes.
- Very gradually add in the beaten egg.
- Note: I stress - VERY GRADUALLY
- Stir in 3/4 of the cheese.
- Season with salt and pepper.
- Fold the macaroni into the mix and pour into a 2-quart casserole dish.
- Top with remaining cheese.
- Melt the butter in a small frying pan and toss the seasoned bread crumbs to coat.
- Top the macaroni with the bread crumbs.
- Note: I like to top this macaroni dish with crushed Sour Cream and Onion potato chips. Ohhhhhhhhh yummmmm...
- Bake for approximately 30 minutes.
- Remove from oven and allow to set for five minutes before serving.
