Scalloped Oysters Recipe
This is a great turkey or chicken stuffing replacement. Although it also goes great with fish such as king or spanish mackerel, or so dolphin (mahi-mahi)

Ingredients
  • 1 pint (or more) of oysters (fresh shucked and salty are best)
  • 6 Tablespoons of cream (i use the heavy)
  • 1/2 Cup dry bread crumbs
  • 1 cup cracker crumbs
  • 1/2 cup melted butter
  • salt/pepper to taste
  • optional ( red pepper) if u like it spicy
  • optional (celery, thinly sliced)

Directions
  1. Drain Oysters
  2. Combine oyster liquid and butter
  3. Grease a 1-1/2 quart baking dish
  4. Combine together cracker and bread crumbs
  5. Place a layer of crumbs in bottom of baking dish then layer with oysters.
  6. Salt and pepper to taste (optional: sprinkle with red pepper and celery slices) and 1/2 butter/oyster liquid.
  7. Repeat layering until oysters and crumbs are used ending with crumbs on top.
  8. Dot the top with some melted butter.
  9. Bake @ 400 degrees for 20 minutes

I will have to try your "take" on scalloped oysters, too - bread crumbs can never hurt anything!
