Simple side dish from Ina Garten (The barefoot Contessa) My husband isn't a potato guy, but he loves these. His family was in town and they were a hit. No one could believe how easy they were.

Ingredients
  • 3 pounds small red potatoes
  • 6 cloves garlic minced
  • 1/4 cup olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper

Directions
  1. Quarter potatoes
  2. Mince garlic
  3. Mix above with olive oil, salt and pepper
  4. Roast at 450 degrees for 50 minutes, stirring occasionally
  5. Remove when browned and tender
