Ingredients
  • 5 Tbsp paprika
  • 1 Tbsp ground dried oregano
  • 1 Tbsp ground dried thyme
  • 1 Tbsp cayenne pepper (or more, to taste)
  • ½ Tbsp finely ground black pepper
  • ½ Tbsp finely ground white pepper
  • ½ Tbsp garlic powder
  • 3 lbs catfish filets
  • ½ cup + 2 Tbsp olive oil

Directions
  1. Place ½ cup olive oil in skillet and heat on medium high.
  2. Mix dry ingredients together in a large bowl or shallow casserole dish.
  3. Wash and pat dry catfish. Rub with 2 Tbsp olive oil.
  4. Dredge catfish in the dry spice mix so that each piece is liberally coated.
  5. Sauté in hot olive oil until meat is flaky (usually 3-4 minutes per side.)

Ahhhh, catfish. My grandfather used to run trotlines in Doctor's inlet off the St, Johns river in Orange Park, FL out of Whitey's Fish Camp. Man did we eat alot of catfish when I was a kid. Blackening spices are fantastic on fish, steak, and pork chops. Thanks 4 the post.
