How to make it

  • Season the chicken breast with salt and peper and coat with sesame seeds.
  • Heat the olive oil in a frying pan and cook the chicken for 2 minutes on each side.
  • Remove from frying pan and place on a baking tray.
  • Cook at 200C for 8-10 minutes.
  • Heat butter in frying pan once foaming add papino slices and cook for a minute.
  • Add tequila and flame to burn off the alcolhol.
  • Stir in the honey.
  • To Serve: Divide papino slices between 4 plates, place a chicken breast on top, crizzle with tequila sauce.
  • Serve with sweet chilli sauce on the side

    Hi Kukla, thank you for your comment. Papaya is the bigger version of papinos and it works just as well. I even use green papaya/papino's just sprinkle sugar over the slices the night before and voila the next day ripe juicy fruit!

    This sounds very good, Tinadc. We can't get papinos here (North America) so we have to substitute them with another fruit...any suggestions?? (I'm not sure what a papino tastes like..)
