How to make it

  • Combine flour; baking powder; cinnamon, salt and nutmeg in a large bowl and set aside.
  • Lightly beat the milk, honey, egg and oil in a separate bowl and add to dry ingredients, stirring until just moistened.
  • Gently stir in apricots, nuts and raisins.
  • Spoon into a greased 23cm loaf pan and bake at 180C for 55-60 minutes or until a skewer inserted comes out clean.
  • * I like to sprinkle some pumpkin seeds on top before I put the loaf pan in the oven!

    I'm a fan of natural un-sulphered dried apricots: they look brown and taste like fruity caramel to me :-)

    I use about 3/4 cup chopped apricots.. and some times chopped dates (same amount).. I sprinkle Splenda Brown sugar over the top (about 1/4 cup).. soooo good!

    Sorry, I don't see how many apricots are called for in your ingredience =) ?? I uploaded a picture, though, of what mine looked like at Christmas time .... minus the pumpkin seeds.
