Apricot Honey Bread

- 750ml nutty-wheat flour shopping list
- 15ml baking powder shopping list
- 5ml ground cinnamon shopping list
- 2ml salt shopping list
- 1ml ground nutmeg shopping list
- 300ml low fat milk shopping list
- 250ml honey shopping list
- 1 egg, lightly beaten shopping list
- 30ml oil shopping list
- 250ml apricots, finely chopped shopping list
- 250ml almonds, chopped shopping list
- 125ml raisins shopping list
How to make it
- Combine flour; baking powder; cinnamon, salt and nutmeg in a large bowl and set aside.
- Lightly beat the milk, honey, egg and oil in a separate bowl and add to dry ingredients, stirring until just moistened.
- Gently stir in apricots, nuts and raisins.
- Spoon into a greased 23cm loaf pan and bake at 180C for 55-60 minutes or until a skewer inserted comes out clean.
- * I like to sprinkle some pumpkin seeds on top before I put the loaf pan in the oven!

I use about 3/4 cup chopped apricots.. and some times chopped dates (same amount).. I sprinkle Splenda Brown sugar over the top (about 1/4 cup).. soooo good!

Hey where are the apricots!! :) I think I can guess an amount, this is a great post. Quick breads are my favorite.
