Poor Mans Lasagna Recipe
I invented this years ago when presented with some donated food items, and everyone who has tried it loves it. It isn't gourmet, but it's cheap, simple, and filling. My ex-roommate's husband and stepson always begged me to make it.

Ingredients
  • 2 packages macaroni & cheese
  • 1 8 oz package of cream cheese, softened
  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can (14.5 oz) tomato sauce

Directions
  1. Boil macaroni according to package.
  2. Drain and add cream cheese and cheese packets.
  3. Mix well, and spread on the bottom of a large baking pan.
  4. Brown ground beef with onion.
  5. Mix in the tomato sauce, then pour mixture over macaroni.
  6. Bake at 375 F for 30 minutes.

HEY, I FEEL LIKE A POOR MAN AFTER XMAS BUT WILL ALWAYS USE THIS RECIPE, EVEN WHEN I AM ROLLIN IN THE DOUGH.


If I have some cheddar cheese, I usually do grate it on top, but it isn't essential to the recipe.


Sweetie, when pay day is far away, I'm making this dish again. What a lovely combination of flavors and ease in prep. Brava.
